Abstract
Al contar con una condición social y económica favorable, los estudiantes incluyen en su dieta diferentes carnes blancas y rojas a diario; estas carnes son consumidas semanalmente, bien sea en las instalaciones de la universidad o por fuera. El impacto ambiental puede variar según el consumo en un periodo de tiempo determinado, ya sea semanal, mensual o anual. Es de vital importancia cuantificar y medir una aproximación de la huella que deja la universidad a nivel ecológico en términos del consumo de carnes, conocer las cifras y buscar posibles soluciones para reducirlas. El cambio climático no es ajeno a nosotros; el cambio climático no es ajeno al CESA. Conociendo el aporte y la contaminación de la universidad se pueden evidenciar las herramientas para comprometerse con un desarrollo sostenible y una responsabilidad social que en verdad sean efectivas.
El objetivo de este trabajo de grado es identificar y cuantificar el impacto económico-ambiental de los Estudiantes del CESA conforme al consumo de carnes. Establecer un seguimiento y registro de la dieta de los estudiantes del CESA como variable principal del estudio Definir diferentes escenarios de impacto ambiental (alto, medio, bajo) respecto al consumo de carnes.
